Asian Ground Beef Bowl

Easy 25 Minute Korean Ground Beef Bowl (Paleo, AIP, Whole30)

Ingredients
  

  • 2 lbs grass-fed ground beef
  • 1 tbsp coconut oil
  • 1 small onion, chopped
  • 1 garlic clove, peeled and minced
  • 2 in fresh ginger, grated on a microplane
  • 1 red bell pepper, chopped omit for AIP
  • 1 yellow summer squash, chopped or zucchini

Sauce

  • 1 tbsp sesame oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 cup coconut aminos
  • 1 tbsp fish sauce

Base Options

  • 4 cups cauliflower rice
  • 6 cups kale or romaine

Toppings

  • 1 green onion, chopped
  • 1 tbsp sesame seeds

Instructions
 

  • Mix all of the sauce ingredients and set aside.
  • Heat a large skillet over medium heat and coconut oil. Once warm, add the onion, cook for about 4 minutes. Add garlic and ginger for 1 minute.
  • Add ground beef and break up with a wooden spoon. Once the meat starts to brown add summer squash and red bell pepper. Stir and pour in sauce.
  • Cook 2-3 more minutes. Serve on top of cooked cauliflower rice or on a bed of salad. Top with chopped green onions and sesame seeds.
