coconut oil

onion, chopped

garlic clove, peeled and minced

fresh ginger, grated on a microplane

red bell pepper, chopped

yellow summer squash, chopped
or zucchini
Sauce

sesame oil

garlic powder

coconut aminos

fish sauce
Base Options

cauliflower rice

kale or romaine
Toppings

green onion, chopped

sesame seeds
Instructions
Mix all of the sauce ingredients and set aside.
Heat a large skillet over medium heat and coconut oil. Once warm, add the onion, cook for about 4 minutes. Add garlic and ginger for 1 minute.
Add ground beef and break up with a wooden spoon. Once the meat starts to brown add summer squash and red bell pepper. Stir and pour in sauce.
Cook 2-3 more minutes. Serve on top of cooked cauliflower rice or on a bed of salad. Top with chopped green onions and sesame seeds.
