TACOS WITH A TWIST
Craving tacos but looking for something new? How about using a sweet potato instead of a tortilla? It’s a great alternative if you’re looking for something different. It also accommodates Whole30 and Paleo diets.
HOW TO COOK SWEET POTATOES – 3 WAYS
There are several ways to prep your sweet potatoes. My preferred method is in the oven, they get extra sweet. If you’re short on time though pressure cooked in the instant pot will you get you an extra soft sweet potato. Microwave works well too but I honestly try to avoid using a microwave as much as possible.
Instant Pot Method
- Scrub skin of sweet potatoes with a brush until clean. Pour 1 cup water into Instant Pot. Place steamer basket in the bottom of the Instant Pot. Place sweet potatoes on top.
- Secure the lid and turn valve to seal.
- Use the manual mode of Instant Pot and set to pressure cook on high for 15 minutes.
- Allow pressure to “release naturally”. Just don’t touch the valve for about 10 minutes. The pressure will slowly release.
- Once the pressure valve lowers, remove lid.
Oven
- Preheat oven to 425º. On a baking sheet, prick sweet potatoes all over with a fork.
- Bake until tender, 45 to 50 minutes.
- Let cool.
Microwave
- Wash sweet potato thoroughly, pat dry, and pierce 3-4 times with a fork.
- Place potato on microwave-safe plate and microwave 5 minutes. If your potato isn’t fork tender after 5 minutes, continue microwaving in 30 second increments.
WHAT TO STUFF THE SWEET POTATO WITH
You can make these yours, add whatever you like. Here are some other ideas:
- If you’re not dairy-free cojita cheese is the way to go. A dollop of sour cream would be delicious as well.
- For the meat filling, you can substitute the ground beef with ground turkey or chicken. To make vegan, sliced mushrooms work great. Just use the same spices and switch out your protein.
- Add some crunch with some shredded cabbage or pumpkin seeds.
- Pico de gallo is always a winner! If you don’t have time to make it, chopped tomatoes and onions works too.
- Like it spicy? Mix some mayo with your favorite hot sauce to create the best creamy spice sauce.
- Don’t forget something rich and fatty like avocado to give them the full flavor burst!
Don’t forget to finish each “taco”with a squeeze of lime, some chopped green onions, and cilantro.

Whole30 Taco Stuffed Sweet Potato
Ingredients
- 2 medium sweet potatoes
- 1 lb grass-fed beef
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 small chopped onion
- 2 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp paprika powder
- 1 tsp chili powder
Toppings
- 3 tbsp chopped cilantro
- 1 sliced jalapeno
- 1 avocado
- 1 lime
Instructions
Sweet Potatoes
- Pre-heat oven to 400F.
- On a baking sheet, prick sweet potatoes all over with a fork.
- Bake until tender about 45 to 50 minutes. Let cool.
Ground Beef
- In a skillet, add olive oil over medium high heat.
- Add the ground beef and brown until no longer pink. Reduce the heat to medium and add garlic and onions. Sauté until onions are translucent.
- Add all the spices and mix everything well to combine.
Stuff Sweet Potatoes
- Cut the sweet potatoes in half.
- Fill with taco meat.
- Top with cilantro, sliced jalapenos, and avocado.
