One of the best parts of this other than being actually good for you is that it’s no-churn ice cream! Living in Brooklyn I have a tiny kitchen which means I keep my kitchen appliances to the minimum! All you need for this is cupcake trays and silicone muffin liners. I recommend using hard cupcake trays and lining with silicone. Silicone trays are a bit too floppy and will get a bit messy when you try to put it in the freezer.

Vanilla Collagen Ice Cream Cups (AIP, Paleo, Dairy-Free)
Ingredients
Vanilla Coconut Filling
- 1 can organic heavy coconut cream
- 2 tbsp collagen powder
- 1/2 cup cashew nuts
- 2 tbsp maple syrup
- 2 tsp vanilla extract
Chocolate Date Bottom
- 3 tbsp cocoa powder or carob powder
- 1 tsp sea salt
- 1/4 cup dates
- 1 cup walnuts
Instructions
Chocolate Date Bottom
- Make the chocolate date bottom first since you'll be filling the bottom of the silicone cups with the paste.
- Add the cocoa powder, sea salt, dates, and walnuts into the blender.
- Put the paste on the bottom of each silicone cup, about 1/4 of inch in each cup.
Vanilla Coconut Filling
- In a high speed blender, mix together the heavy coconut cream, collagen powder, cashews, maple syrup, and vanilla extract.
- Pour into the silicone cups.
- Place in freezer for 1-2 hours. When solid it's ready to eat!
