There are so many ways to eat tacos. My favorite is the easiest way. These sheet pan chicken tacos come together in less than 5 min and cook for 20 minutes. Feel free to substitute the chicken with shrimp or fish if you’re craving seafood instead.
The magic ingredient to making tacos extra delicious are the spices! If you’re following an AIP diet you know so well that traditional taco seasoning doesn’t pair so well with AIP. Fear no more! Here’s a spice mix you can make at home that will remind you of the paprika and chili days!
I recommend making a large batch of the spice mix so that you have it on hand. It can easily be used for any dish you want to add a kick to.
The next best thing to the tacos themself is the salsa you put on top. I particular like my salsa on the sweet side to create that sweet and salty combo. Mangos are my go to but you could replace with pineapple if that’s more of your thing. Whatever you do don’t forget the cilantro. Unless you’re one of those that associate cilantro to soap. In that case, parsley is the way to go.
PRO TIP
These tacos taste great in Siete tacos but if you really want to bring this dish to the next level I recommend making your own tortillas. It will take you about an extra 30 minutes all said and done. Check out my recipe here.
You can makes these two ways, with a tortilla press or rolling pin. I personally prefer the tortilla press because well it’s just fun! And you get the prefect shape every time.
If you’re using chicken breast make sure to not over cook. This handy thermometer will assure that you get the juiciest chicken every time. Once it hits 165F it’s done.
SERVING SUGGESTIONS
Plantains, plantains, and more plantains! My all time favorite is the sweet version, aka maduros. These also come together super quickly in an air fryer, you can also pan cook them in oil. The added benefit of the air fryer though is that it requires a lot less oil to get the same delicious result. You just chop them up and coat them in your favorite high heat oil (I use avocado oil). I like to squeeze some lime juice and a little bit of salt on top. For one inch pieces, air fry for about 5 minutes and you’re done!
Sheet Pan Tacos with AIP Seasoning
Ingredients
Tacos
- 1 lb chicken breast
- 1 onion red or white
- 6 radishes quartered
- 4-5 leaves kale, chopped
- 6 garlic cloves
- 2 tbsp avocado oil
AIP Taco Seasoning
- 1 tbsp dried oregano
- 1 tsp garlic powder
- 1 tsp coriander (dried cilantro)
- 1 tsp ground ginger
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- 1/2 tsp himalayan pink sea salt
Mango Salsa
- 1 mango diced
- 1 avocado diced
- 4 tbsp cilantro chopped
- 6 radishes chopped
- 1 tbsp fresh lime juice
- 1/2 tsp garlic powder
- 1 tsp salt
Instructions
- Turn the oven to 350 F.
- Blend all of the AIP spices together and coat chicken.
- Chop the onion in slices, quarter the radishes and chop the kale.
- Put everything on the pan. Don’t peel the garlic cloves.
- Drizzle the olive oil on top of everything.
- Put the sheet pan in the oven and roast for 20 minutes or until the chicken reaches 165 F.
- When the chicken is cooked, cut in slices. Put all of the ingredients in your favorite tortilla.

Mango Salsa
- Mix all of the ingredients together gently. Squeeze lime juice on top.
