Summer is almost over but you can still enjoy the summer flavors! This pineapple salmon is tangy yet sweet and pairs really well with air fried plantains. I always imagine myself in the tropics when we have this. It’s like a vacation at my own dining table!
The best part is that you’ll probably have all of the ingredients in your kitchen. I love having frozen fish in the freezer ready to go. Salmon is usually a staple since everyone loves it in my house.
THE SAUCE
The sauce/marinade comes together rather quickly too. You can can marinate your salmon for as little as 15 minutes while you prepare your side dish or up to one hour. Fish doesn’t need to be marinated too long since it soaks up flavors rather quickly.
THE GARNISH
If you don’t have the garnishes you can totally skip it. The dish is great without them too. They do add an extra layer of flavors but if you’re in a hurry or don’t want to bother running to the grocery store feel free to skip it!
SIDE DISH IDEAS
- Air fried plantains are pretty spot on and go really well with the pineapple. You can also pan fry the plantains if you don’t own an air fryer
- Cauliflower rice or regular rice are great to soak up the sauce too.
- Green beans are a nice addition if you would like to add some vegetables to your dinner.
- The salmon is great the next day served on top of a bed of greens for a nice salad.

Pineapple Salmon (Whole30, Paleo, AIP)
Ingredients
- 2 salmon filets
- 2 tbsp ghee
Sauce
- 1 tbsp rice vinegar
- 1/2 tbsp honey omit for Whole30
- 1 tbsp coconut aminos
- 2 tsp toasted sesame oil
- 1/2 tsp dried ginger
- 1/2 tsp fish sauce
- 1/2 cup can crushed pineapple
Garnish
- 2 tbsp freshly chopped cilantro
- 1 tbsp toasted sesame seeds
- 1 thinly sliced green onion
- lime wedges for serving
Instructions
- Mix the sauce ingredients together. Set 1/4 cup aside to top the fish once it's cooked. Pour over salmon let marinade 15 minutes – 1 hour.
- Heat pan and add 2 tbsp ghee. Raise the heat to medium-high. Place the salmon, skin-side up in the pan. Cook until golden brown on 1 side, about 4 minutes. Turn the fish over with a spatula, pour the sauce over salmon. Cook about 3 minutes more.
- Top with remaining sauce. Garnish with sesame seeds and green onions and serve with lime wedges.
