Who says desert can’t have some healthy ingredients in it?? I’ve been on a peanut butter kick and these Peanut Butter Blondies really hit the spot! They’re loaded with chocolate chips and almond flour. We all know almonds are good for you too so it’s a win win right??
Just in case you need further persuasion here are a few fun tidbits about almond flour:
- low in carbs
- high in protein, manganese, vitamin E and monounsaturated fats, and fiber
- helps to reduce “bad” LDL cholesterol and insulin resistance (1, 2).
AND you would never guess that they’re dairy free and gluten free! They taste so decadent that you will never miss a classic buttery brownie again.
If you want to make these extra nutty, you can add some chopped walnuts or other nut of your choice.
These are super fun to make with kids too. My four year old loves to use the hand mixer and enjoys licking the whisks even more!
You don’t even have to make individual cookies which makes this recipe ridiculously easy. All you have to do is scoop in all of the batter in one pan and you’re done!

- Eat Mud – this one is actually a mousse vs an ice cream. I love the cold brew one and it’s made locally here in Brooklyn.
- Van Leeuwen Ice Cream
- Cado Ice Cream – this is made from avocado and is oh so creamy!
- Strawberries, pairs especially well with the chocolate and peanut butter and adds vitamins!
PARENT HACK
You can easily turn this into a decadent birthday cake if your child is gluten and dairy free. Just pour some melted chocolate on top and rainbow sprinkles. These sprinkles are especially neat because they are dye free and plant based. The kids will love it!
Peanut Butter Blondies
Ingredients
- 1/2 cup peanut butter
- 2 eggs
- 1/2 cup coconut sugar
- 2 tbsp maple syrup
- 1 tbsp coconut oil
- 1 cup almond flour
- 1 tsp baking soda
- 3/4 cup dark chocolate chips
Instructions
- Turn oven on to 350F.
- Mix together eggs and coconut sugar. I recommend using a hand mixer if you have one,.
- Add peanut butter, maple syrup, and coconut oil.
- Once the wet ingredients are all mixed add almond flour and baking soda.
- Stir in chocolate chips.
- Put the batter into a 8in x 8in pan. Bake at 350F for 15-18 min or until just golden. I recommend undercooking if you want the gooey brownie texture. Enjoy!
