It’s been a strange few weeks. We’re about 4 weeks into the pandemic and life is not the same. I’ve pretty much been staying indoors 24/7 living between the living room, kitchen, and bedroom. Every single meal is now home cooked which isn’t a bad thing but it has been super time consuming. Especially when you’re juggling a full time job and childcare.
I’ve found the best way to save time and sanity is to batch cook as much as possible. There’s a whole make-ahead recipe section on my website which has simple recipes you can make over the weekend to make the week easier.
Below are a few of my favorites you can make in batch, double the recipes and have homemade meals ready for you throughout the week.
SUPER FOOD MEATLOAF (WHOLE30, PALEO, AIP)
I love to sneak density rich foods in any dish I serve my kid. This one is full of them! Grass-fed beef, liver, and a variety of vegetables. Make it advance and have lunch and dinner ready for you when you most need it!
Cold Busting Chicken Soup (PALEO, AIP)
This soup is packed full of good for you ingredients like ginger, turmeric, and bone broth. It’s packed full of veggies too which makes it super nutrient dense all in one bowl .
MOUTH WATERING PROVENCAL BEEF STEW (PALEO, WHOLE30)
Hearty and filling this beef stew will warm you up on a cold or rainy day. It’s packed with veggies simmered in a rich tomato sauce. Eat is as is or serve it on your favorite gluten free pasta.
EASY GLUTEN-FREE BAGELS (PALEO)
These bagels are so awesome to have on hand on a busy week day morning. It’s the perfect grab and go breakfast. Whip these up on Sunday and you’re set for the whole week. Double the batch if you’re feeding a few people.
