If you are short on time, this Easy 25 Minute Korean Ground Beef Bowl recipe is for you! It has the flavors of beef bulgogi but is made with ground beef and does not require any marinating. I call it easy bulgogi for those on the go.
WHAT IS BULGOGI?
Bulgogi is a Korean dish made of thin, marinated slices of beef or pork grilled on a barbecue. Bulgogi literally translates to “fire meat”. When made at home it is stir fried in a pan.
WHAT GROUND BEEF IS BEST?
If you are able to purchase grass-fed meat, please do. Let’s break it down.
HEALTHY FATS
It actually contains less fat than grain fed and had much more benefits.
Grass-fed beef has a more favorable ratio of omega-6 to omega-3 fatty acids and which helps with inflammation.
It also has a higher content of conjugated linolenic acid which fights off cancer.
MORE NUTRITIOUS
It has much higher levels of vitamin A, E, and other antioxidants. Cows eating their traditional diet, pasture grass, makes healthier cows which translates to better nutrition for us.
LOWERS YOUR RISK OF HEART ATTACKS
It has a lower amounts of saturated fats.
SAFER OPTION
Likelihood of getting sick from grass-fed meat is much lower since it is raised without antibiotics and is hormone free.

CAN YOU USE GROUND PORK OR TURKEY?
Yes! Please use whatever meat you like best. The sauce is so flavorful it can work on any type of ground meat. If you have the time you can also use sliced beef and marinate it in the sauce for 2 hours.
HOW TO SERVE THE GROUND BEEF BOWL
There are a lot of different options for this one!
- On top of a bed of fresh greens. When serving warm food, it’s best to use hearty greens such as kale so that they don’t wilt too quickly. Romaine also works well if you want an extra crunch
- This sauce works really well on top of cauliflower rice too. You can cook the cauliflower rice in a pan with some ghee for about 5 minutes before adding the beef.
- Steamed vegetables are a great choice as well! Try some broccoli, bok choy or whatever you have on hand
Easy 25 Minute Korean Ground Beef Bowl (Paleo, AIP, Whole30)
Ingredients
- 2 lbs grass-fed ground beef
- 1 tbsp coconut oil
- 1 small onion, chopped
- 1 garlic clove, peeled and minced
- 2 in fresh ginger, grated on a microplane
- 1 red bell pepper, chopped omit for AIP
- 1 yellow summer squash, chopped or zucchini
Sauce
- 1 tbsp sesame oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 cup coconut aminos
- 1 tbsp fish sauce
Base Options
- 4 cups cauliflower rice
- 6 cups kale or romaine
Toppings
- 1 green onion, chopped
- 1 tbsp sesame seeds
Instructions
- Mix all of the sauce ingredients and set aside.
- Heat a large skillet over medium heat and coconut oil. Once warm, add the onion, cook for about 4 minutes. Add garlic and ginger for 1 minute.
- Add ground beef and break up with a wooden spoon. Once the meat starts to brown add summer squash and red bell pepper. Stir and pour in sauce.
- Cook 2-3 more minutes. Serve on top of cooked cauliflower rice or on a bed of salad. Top with chopped green onions and sesame seeds.
