I’m just going to say it, this is addictive as crack, you’ll want to eat it on everything! Also, it pretty much makes itself in a slow cooker or Instant Pot. I promise you’ll make new friends with this Instant Pot Caramelized Onion Bacon Jam!
Lately, I’ve been addicted to anything from Simple Mills. This spread/jam, whatever you want to call it is amazing on their Sea Salt Crackers. I honestly recommend buying more than one box at a time because once it’s open you’ll finish the box, believe me.
If you love caramelized onions like me, go heavy on the onions. They will melt in your mouth. On the other hand, if you would prefer a thicker jam-like consistency double up on the bacon.
SERVING SUGGESTIONS
- I love to use Simple Mills Sea Salt crackers to dip into the jam. Perfect for parties.
- If you want to up your pizza game, spread it on your preferred pizza crust and top with goat cheese or Kite Hill’s Dairy Free ricotta. Finish with some arugula and prosciutto before serving. You will NOT be disappointed.
Instant Pot Caramelized Onion Bacon Jam
Ingredients
- 8 oz bacon
- 4 large yellow onions
- 1 tsp salt
- 1/4 cup coconut sugar
- 1/4 cup apple cider vinegar
- 1/4 cup water or apple juice
- 1 tsp fresh thyme leaves
- 1/4 tsp ground cinnamon
Instructions
- Add bacon to instant pot and cook on saute until barely crisp, about 8 minutes. Remove and put aside.
- While the bacon cooks, chop up the onions. You can do this really quickly in a food processor.
- Leave bacon fat in Instant Pot and add onions to drippings in the pot. Stir until all of the onions are coated in bacon fat.
- Chop up bacon with kitchen scissors. Add coconut sugar, water or apple cider, vinegar, thyme, and cinnamon. Stir to combine.
- Secure the lid on the pot. Open the pressure-release valve. Select slow cook and adjust to More (high). Cook for 2 hours with lid on and cook for 1 hour with lid off.
