What doesn’t taste good with bacon? Collard greens have grown on me over the years, they definitely weren’t my go-to vegetable. Now I can’t get away from them. I especially love them slow cooked with bacon and apples! The apples cuts the bitterness of the greens and the bacon gives them that extra umami flavor. These will please the pickiest eaters.
The best part is that these cook super quickly, just 6 minutes in your Instant Pot or pressure cooker. The pressure cooker method really makes these melt in your mouth. It’s as if they had cooked for hours.
This recipe also goes really well with my beef barbacoa, slow cooker pork ribs or the BBQ chicken.

PRO TIP
The easiest way to stem the collard greens is to just pull the leaves from the stem. You can hold the thick bottom part of the stem with one hand and grab the leaves with the other hands. Then you just run your hand up the stem and pull the leaves off. If you’d prefer a neater cut you can always use a good old knife and cut along the stem.
Bacon Collard Greens
Ingredients
- 1 bunch collard greens Stem and cut the collard greens into 1/2 in ribbons.
- 4 slices bacon Cut the bacon into 1/2 in chunks.
- 1 medium apple Chop up the apple into 1/2 in cubes.
- 1 cup bone broth or water
Instructions
- Saute the bacon until browned and add the apple chunks.
- Add the collard greens and coat in bacon fat. Add the bone broth and cook on Manual High Pressure for 6 minutes. Use the quick pressure release method.
- It’s ready to eat. Add salt to taste and serve with some pulled chicken or pulled pork.
Stovetop
- Saute the bacon in a heavy-bottomed pot. Add the cubed apples.
- Add the collard greens and coat in bacon fat. Add the bone broth and simmer for about 40 minutes.
- Taste and add salt if necessary.
