Did you know that beets have almost all of the minerals and vitamins you need? As a general rule of thumb, the brighter your vegetables are, the higher in nutrients they are.

COOKING TIP
I hate peeling and cutting beets because your hands always end up stained. I finally found a way to avoid that. You can pressure cook them with the skin on in the Instant Pot and then peel them. All you have to do is let them cool and then rub the skin off with paper towels. It’s a pretty neat trick!

Marinated Beet Salad (Paleo, Whole30, AIP)
Equipment
- Instant Pot
Ingredients
- 1 lb beets
- 1/2 cup apple cider vinegar divided
- 1/4 cup olive oil
- 1 medium shallot finely chopped
- 1 tsp chopped fresh thyme
- 2 tbsp chopped mint or tarragon
- 1/4 cup pistachios omit for AIP
- 1 tsp salt
- 1 orange peeled and quartered
Instructions
- Trim the top and bottoms of the beets.
- Add 1 cup of water to Instant Pot and 1/4 cup of apple cider vinegar.
- Set instant pot to 15 minutes. Release pressure once done and let the beets cool off.
- Once cool, rub skins off with a paper towel. Put the beets in a bowl and add 1/4 cup apple cider vinegar, shallots, thyme, and olive oil.
- Let sit at least 2 hours to overnight.
- Before serving add pistachios and chopped mint.
- Beets can be marinated 2 days ahead covered and chilled.
