It’s getting cold and there’s nothing like a warm bowl of curry beef stew to make you feel cozy and happy. This stew has ginger, coconut, and turmeric to make it super flavorful and healthy. It can also be made AIP, see below for more info.
WHICH BEEF IS BEST FOR BEEF STEW
You will want a tough inexpensive meat to make this stew. The longer it cooks, the tastier it will get! I would recommend chuck meat because it has lots of collagen-rich connective tissue. The connective tissue will melt and release the gelatin which creates the melt in your mouth meat you are looking for.

Yes and that’s the best part of it! The tough chunks of chuck roast will turn into melt in your mouth shredded meat. This is a great way to turn an inexpensive piece of meat into a mouth-watering dish!
HOW TO COOK BEEF STEW
The best way to cook beef stew is in a slow cooker or instant pot for a long time on low heat so that the meat falls apart. I prefer the instant pot since you can also sautee in it and you won’t have to dirty another pan.
If you don’t have an Instant Pot or slow cooker you can also make this on a stovetop in a Dutch oven but you will need to be home all day to watch it. In my opinion, Instant Pot or a slow cooker is the way to go. Turn it on and go about your day. You’ll come home to an amazing warm comforting stew.
CAN BEEF STEW BE FROZEN
Absolutely! I always freeze half of the batch to have on hand for a lazy night. You can either freeze individual portions or all of it in one freezer container. Just make sure the stew is room temperature before putting it in the freezer. You’ll thank your past self on a snowy evening!
HOW DO I MAKE THIS AIP FRIENDLY?
As you know curry is off the list if you are following the autoimmune protocol. The good news is that you can make this curry-like without the curry. Turmeric is a great alternative, it has the deep color of curry and also has a similar taste. When mixed with coconut milk it tastes almost like a real curry! In this recipe just omit the curry, I promise you won’t miss it.
WHAT KIND OF VEGETABLES CAN I USE IN THIS STEW?
Almost any type of root vegetable will work well in this. You basically want a vegetable that won’t fall apart if it cooks for a long time. Root vegetables are ideal for this. I often use a mix of turnips, rutabagas, sweet potatoes, celeriac, and carrots. Many of these fall under the 13 healthiest root vegetables. This recipe also calls for ginger and turmeric which is part of the list too!
Curry Beef Stew (AIP, Paleo, Whole30)
Ingredients
- 3 lbs chuck roast
- 2 tbsp coconut oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 cups bone broth or water
- 1 tbsp apple cider vinegar
- 2 tbsp fish sauce
- 4 large carrots chopped in 1 inch pieces
- 1 sweet potato chopped in 1 inch pieces
- 1 turnip chopped in 1 inch pieces
- 1 tbsp ground turmeric
- 1/2 tbsp ground curry omit for AIP
- 1 can full fat coconut milk
- lime slices
Instructions
Instant Pot
- Set Instant Pot to sautee and add 1 tbsp coconut oil. Add meat, sautee until brown. Take out beef and set aside.
- Add 1 tbsp coconut oil and cook onions, garlic, and ginger until fragrant.
- Add chopped carrots, sweet potato, and turnip. Add turmeric and curry, stir.
- Add broth, coconut milk, fish sauce, apple cider vinegar, and salt. Return beef to pot. Set your Instant Pot to low for 8 hours. You can also set to high for 5 hours.
Slow Cooker
- If you don't have an Instant Pot you can brown the meat in a large pot. Once brown, take out meat and set aside. Add 1 tbsp coconut oil and cook onions, garlic, and ginger until fragrant.
- Add 1 tbsp coconut oil and cook onions, garlic, and ginger until fragrant.
- Add broth, coconut milk, fish sauce, apple cider vinegar, and salt. Return beef to pot. Set your slow cooker to low for 8 hours. You can also set to high for 5 hours.
- Laddle into bowls and squeeze some fresh lime juice on top! Enjoy!
